Linee pronounced Line-e is a name giving to some years ago by a friend’s daughter who found it difficult to say Caroline as a little girl, over the years it has stuck and now I am known to many as Linee.

All Boxed Up - Sweet Treats

I was asked if I could make some thank you treats to be given out to the men who helped at our Sisters Conference last weekend. So here is what I came up with.
                                                                          These make great little gifts for friends and neighbours.



Melting Moments

Ingredients


125g butter, softened
3/4 cup (115g) plain flour
1/4 cup (45g) icing sugar mixture
1/3 cup (50g) custard powder
60g butter, softened, extra
2/3 cup (110g) icing sugar mixture, extra
2 tsp finely grated orange rind
1 tbs orange juice

Method


Preheat oven to 160°C. Line 2 oven trays with baking paper. Use an electric mixer to beat butter until pale and creamy. Add the flour, icing sugar and custard powder and use a wooden spoon to stir to combine.

Use your hands to roll teaspoonful's of the dough mixture into balls. Place the balls 3cm apart on the lined trays. Use a fork dusted in icing sugar to gently flatten. Bake in preheated oven, swapping trays halfway through cooking, for 15 minutes or until just cooked through. Remove from oven and set aside for 30 minutes to cool.

Use an electric mixer to beat the extra butter and icing sugar in a bowl until light and fluffy. Add the Orange rind and juice and beat until combined. Spread the butter mixture over the flat side of half the biscuits and sandwich together with remaining biscuits.

Fruit cake Truffles

Ingredients

About 500g dark fruit cake
1/4 cup orange juice
70g Milk chocolate bits
2 Teaspoons orange peel

Method

Break up fruit cake in a large bowl.
Add a little orange juice to just moisten cake.
Roll cake into truffle size balls and place on a tray lined with baking paper and freeze for 10 minutes to      firm up.
Melt choc bits in microwave on high for 1 minute, remove and mix until smooth.
Remove truffles from freezer and place in small paper cake cases, drizzle over melted chocolate and top with some orange peel.
Return to freezer for 5 minutes until chocolate has set.

Meringues   

These were made by my friend and dipped in melted chocolate.

I bought these stunning boxes from a paper products supplier near home and added the rustic string for some simple effect.
