My mum who does not bake suprised us on Sunday evening with a fruit cake that she had made. She had visited a friend in Adelaide when over for the Aussie Rules Football game Geelong vs Adelaide and was given this amazingly easy and quick little recipe. All it take is three ingredients and very little preperation.
Ingredients
2 Cups of orange jucie
2 Cups mixed dried fruit
2 Cups SR Flour
Method
Soak fruit in orange juice over night, mix in flour until well combined.
Pour mixture into a well greased loaf tin.
Cook at 160oC until firm to touch and golden.
Now how easy was that....
Try substituting with GF flour and you have a Gluten Free & Dairy Free cake....
